Gluten Free Bread Recipe

One of my readers contacted me asking for a good tasting gluten free bread recipe so here it is
 This is a bread machine recipe that will also work very well in a loaf pan.  If you are using a bread machine cut the recipe in half.

This is enough for two loafs of bread

2 cups BROWN RICE FLOUR
1 cup 1/2 ARROWROOT FLOUR
1/4 cup Sugar
2 tsp 1/2 XANTHAN GUM
1/2 cup NONFAT DRY MILK POWDER
3/4 tsp SEA SALT
1 Tb ACTIVE DRY YEAST
1/2 cup Warm Water
2 tsp Sugar
1/4 cup Vegetable Shortening
1 cup 1/4 Hot Water
1 tsp Vinegar
1 Egg + 2 Egg Whites

Combine all the ingredients in your bread machine or 

-Use a mixer and mix all ingredients with a paddle.  
-Mix for ten minutes at slow medium speed.
-Spray your pan with oil and pan up your loaf.  The bread should look more like a cake batter right now.  
-Allow to proof until mixture is doubled in size.  (I would cover it with another loaf pan so it does not touch the top. proof uncovered for the last 15 minutes for a harder crust. )

Bake it at 400 degrees for 45-60 minutes or until golden brown on top.

When making cookies, mix the dough, and then wrap the dough for at least one hour. This process is call hydrating the dough, and will allow the dough to absorb the liquid.  If you do this and then bake your cookies you will be left with a much better product overall.

When making bread always use room temperature water.  hint: when running the water, touch it, if it feels cold its probably room temperature.  Remember room temperature is 68 degrees.  That should feel cold to the touch.

How one change can make gluten free pastries taste so good!

   

    Imagine tasting the best cookie ever, then
realizing its gluten free.  Wow, I had no idea that gluten
free pastries could taste so much better after I made one
change to the recipe.
    The  Big secret is replacing tapioca flour with arrowroot
flour.  Tapioca flour leaves a bad after taste in your
mouth, which in turn makes any pastry taste awful.  The
benefit to using arrowroot flour will be that it takes away
the bad after taste and completes the products structure
needed in the flour.  Give it a try I promise you will not
be disappointed.  Just for reading this article I will
include my personally created all purpose gluten free flour
recipe for you to use.
 The Best Ever Gluten Free All Purpose Flour Recipe

Many gluten free pastries recipes depend on the wheat flour
to complete the recipe.  At last I after 2 years of testing
I have come up with the perfect flour recipe.  A blend of
Brown rice flour or white rice flour depending on what you
are making which adds the best flavor combine with potato
starch, arrowroot flour and xanthan gum or guar gum.

Gluten Free Flour
Recipe

2 cups brown rice flour

1/3 cup arrow
root flour
1t xanthan gum or guar gum

Use this recipe in any recipe that calls for wheat flour
and
remember you can substitute cup for cup with
this.  The only thing I would not use this in bread
recipes.
Gluten free bread recipes can be complex than regular

Gluten Free Bread Tip #1

  Although I have not posted anything bread related yet I want to give you a tip if you are already making gluten free bread.  Here is the tip.  Increase the breads water content.  What I mean is the flours used in gluten free bread are very dry so you must compensate for that by increasing the hydration levels.  While you are at it try using carbonated water the extra bubbles help lighten the bread.  Or if you want a higher protein bread add a little more eggs.  These are just some of the many tips I will be giving to my readers.  Please subscribe to my feed or follow my blog for future updates.  Thank you

Want Some Good Gluten Free Pizza?

  Ah, Pizza.  Nothing like a good piece of hot pizza fresh out of the oven.  Unfortunately most gluten free pizza is not good.  I  was reading a blog today about someone not being able to find good gluten free pizza.  Well stop looking because I have found what you are looking for.
   The product I am talking about is Bob's Red Mill gluten free pizza mix.  This mix is great for someone who wants pizza.  follow the instructions and cook your crust thoroughly until it is golden brown all over.  After it is cooked put your toppings on it and go back in the oven for a few more minute.  When the toppings are cooked and melted, cut up and enjoy.

The Best Ever Gluten Free All Purpose Flour Recipe

Many gluten free pastries recipes depend on the wheat flour to complete the recipe.  At last I after 2 years of testing I have come up with the perfect flour recipe.  Here is the recipe.
  Wait first lets go over a few things.  A blend of Brown rice flour which adds the best flavor combine with potato starch, arrow root flour and xanthan gum or guar gum.  I use arrow root even though almost all gluten free flours have tapioca flour I can not stand the flavor of tapioca flour.  It leaves a really bad after taste in your mouth.  For that I use arrow root flour instead.

Gluten Free Flour Recipe
2 cups brown rice flour
2/3 cup potato starch
1/3 cup arrow root flour
1t xanthan gum or guar gum

That is it use this recipe in any recipe that calls for wheat flour and remember you can substitute cup for cup with this.  The only thing I would not use this for is bread recipes.  Gluten free bread recipes are more complex than regular bread recipes.  I go into great detail later.

I am a professional pastry chef specializing in gluten free pastries.   My wife suffers from severe food allergies and one of her biggest and worst allergies is wheat and gluten.  This is the main reason why I specialize in gluten free pastries in the 1st place.  That being said wheat and gluten allergies have been on the rise just as celiac disease has been.
I am starting this site to help others.  I have a trained palate I when I first tasted gluten free pastries I thought they were awful so I set out on a mission to make the best tasting gluten free pastries that I could.
